Here in the U.S., we just call a cookie a “cookie” and a cracker a “cracker.”

We only call something a “biscuit” if it’s a small, light bread with a firm, brown crust and a soft interior that can hold a reasonable amount of butter.

Another thing that makes a biscuit stand out from other types of bread? You don’t need to use yeast as a leavening agent. Instead, you can use baking soda, baking powder, or the beaten biscuit method.

A Little Bit of Biscuit History

The American biscuit, as we know it, was created in the early 19th century before the Civil War.

Yeast for bread-making was expensive and hard to store, so cooks came up with a cheaper method.

They would beat and fold the dough to incorporate air into it, which would expand when heated in the oven, causing the biscuit to rise. This is known as a “beaten biscuit.”

And because it was harder than a normal piece of bread, the biscuit was able to keep its shape when being used to wipe up gravy. Genius!

Biscuits rose to prominence mainly in the South because the flour from the South was made from soft winter wheat and was better suited for biscuit-making than protein-heavy Northern flour.

The canna biscuits recipe that we’re going to be looking at produces 40 cookies, depending on the size that you make them in. In order to make sure that they’re all the same size, we recommend using kitchen scales and weighing specific amounts of dough for shaping each cookie. Let’s have a look at this delicious recipe!

Canna Biscuits Ingredients:

  • 500ml bottles water
  • 130g cannabutter
  • 250g flour
  • 2 eggs
  • Flavoring to taste
  • 120g sugar

SEVERAL  DIFFERENT METHODS OF INFUSION

There are several different ways to infuse cannabis biscuits. You can use cannamilk, cannaoil or cannabis yogurt whey. Otherwise, if you’re really pressed for time, use decarbed, finely ground cannabis. Ensure that you thoroughly whisk ground herb into the dry ingredients for consistent dosing.

CANNABIS YOGURT WHEY

If you made cannabis Greek yogurt, you probably saved the whey. Now you can put the leftover cannabis whey to good use. The terpenes and flavonoids captured in the whey create a bold and delicious taste, similar to sourdough bread.

CANNAMILK

If you don’t have cannamilk, easily make some. Start by adding small pieces of decarboxylated cannabis to milk in a double boiler. Heat to 180°F (almost boiling) and maintain heat for at least 30 minutes while stirring often. Pour through a strainer and let cool.

CANNABIS INFUSED OIL

When making infused oil, be careful to maintain a low heat. Otherwise, the cannabis and the oil could scorch. This can degrade the cannabinoids and ruin the taste and texture of your oil. Go low and slow and never get water in your oil.

CANNABIS BISCUITS INGREDIENTS

  • 2 cups flour
  • 4 tsp baking powder
  • 2 Tbsp white sugar
  • 1 tsp salt
  • 1 c grated cheddar cheese (optional)
  • ⅓ c cooking oil or cannaoil
  • ¾ c whey or cannamilk

HOW TO MAKE CANNABIS BISCUITS

  • Preheat oven to 400°F.
  • Mix all of the dry ingredients and the grated cheddar cheese together.
  • Make a well in the dry ingredients.
  • Put liquids in the well.
  • Gently stir until dough forms.
  • Roll out to 1” thick, then cut into rounds. Alternatively, form into 1” patties by hand, using ⅓ cup of dough per biscuit.
  • Place on parchment lined baking sheet. You can brush the tops of the dough with egg wash if you want a shiny top crust with golden brown colour.
  • Put on center rack in oven for 15 minutes or until biscuits are slightly browned.

WHAT TO EAT WITH CHEESY CANNABIS BISCUITS

Cannabis biscuits are delicious all by themselves. However, you can enjoy them with bacon and eggs, butter, jam, and of course…gravy!!! These delicious biscuits also can be served as a side with any soups or meat dishes including chicken, pork and beef.

  • 1 c Grated cheddar cheese optional
  • ⅓ c oil or cannaoil
  • ¾ c milk, cannamilk or cannabis whey

  • Preheat oven to 400°F.
  • Mix all of the dry ingredients and the grated cheddar cheese together.
  • Make a well in the dry ingredients. Put liquids in the well.
  • Gently stir until dough forms.

Notes

Variation Garlic Cheddar Cannabis Biscuits

Add 3 tsp garlic powder and 1 tsp powdered soup stock to the dry ingredients in the recipe.
